Inspired by the cuisine tradition in countries such as Greece , Spain and Italy , the Mediterranean diet is associated with cardiovascular health .
The Mediterranean diet consists of lots of vegetables , fresh fruits , whole grain cereals , olive oil and nuts , as well as poultry and fish .
The diet does not involve red meat , butter or fat of animals .
Each component in the Mediterranean diet has a beneficial nutrients .
Research in mice
Professor Philip Eaton from King's College London and colleagues from the University of California in the United States convinced the ingredients in the diet that makes nitric fatty acids .
In a study funded by the British Heart Foundation , the researchers tried to reveal the effects of nitric acid on body fat mice .
Nitrate fatty acids help lower blood pressure by blocking an enzyme called epoxide hydrolase .
Professor Eaton said : " Humans have the same enzyme , so we think the same thing will happen in humans . "
This explains why the Mediterranean diet is healthy for the body , although it contains fat .
" The fat in the Mediterranean diet , when combined with nitrate or nitrite , will cause a chemical reaction and fused to form nitric fatty acids . "
